Quick and Easy Tomato Soup

Cooked tomatoes have lots of lycopene, which helps protect against prostate and other cancers. For a perfectly smooth soup, let it cool for a bit and run through the food processor again. - Jenny Jones

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Makes: 3-4 servings

Easy Tomato Soup, Best Tomato Soup Recipe | Jenny Can Cook (1)

Ingredients:

  • 1 teaspoon olive oil
  • 1/2 cup finely diced onion
  • 1 clove garlic, minced

  • 28-ounce can plum tomatoes (San Marzano tomatoes are best)
  • 1 cup chicken or vegetable stock
  • 3 teaspoons sugar
  • 1/4 teaspoon salt + pepper to taste

Instructions:

  1. Puree the tomatoes in a food processor until smooth, about a minute.
  2. In a soup pot, sauté onion and garlic in oil for 2 minutes.
  3. Add tomatoes, stock, sugar, salt & pepper and bring to a boil. Reduce heat, cover and simmer for 20 minutes.

Note: For cream of tomato soup just add a teaspoon of whipping cream per serving.

    I just discovered your youtube channel about an hour ago and I am quite excited to start watching. I was slightly saddened to see it has been somewhat dormant. But then I was directed to your site and can see that you are very active in 2020. Yeah! Your site is fantastic and at the moment I am just exploring it. This recipe in particular made me take pause. A couple years ago, I discovered a soup “recipe” from the U.K. made with “tinned” tomatoes, baked beans and carrots. The beans add protein and a “creaminess” to the soup. It was an amazing discovery. So now I just comment when I see tomato soup recipes for those who may be interested in adding a bit of protein to their soups. Lol. I love how health conscious your recipes are. I just want to say thank you for keeping this site active during Coronavirus. It is things like this that make our quarantines so manageable.

    As I was browsing through your recipes I have noticed that it has taken me back some to my childhood in Germany.
    We have many recipes similar to the ones you have posted.
    I absolutely love your recipes and can’t get enough of them.
    You are an absolute SCHATZ (treasure) .

    Hi Jenny,

    Thank you for the quick response to my question.

    Happy to hear that using San Marzano crushed tomatoes is o.k.

    I’m going to make your version next week and will report back to you
    how it turned out. My hubby is crazy nuts for tomato soup!
    I can’t make enough of it.

    So we’ll see what he thinks of yours

      If your husband is “crazy” for tomato soup, you might want to try this: Scald, then peel several fresh tomatoes, add carrots, green pepper, onion, celery, and maybe a little garlic (which have been chopped in your handy-dandy chopper for faster cooking). Cook up, then puree and add some chicken broth for added flavor. Noodles if desired.

      Jenny, can I use San Marzano’s crushed tomatoes for this soup?

      I make another tomato soup and use the San Marzano brand.
      It is absolutely delicious! I also use a hand blender that works
      great. Just wondering if Pomi would make a difference?

      My Grandma use to make them and they were out of site!
      She was Croation. They are good cooks too!

        Yes, San Marzano tomatoes are the best so use them for this soup. In fact, I will add that idea to the recipe.

        You are so great ! Love your recipes ! Tell me a year or two ago you gave away some very fun colorful spatulas, all different sizes …”guess how many are in there…. ” What store did you purchase these from ? I really need some new ones ? Thx and happy cooking ! Anne

          I must have close to a hundred spatulas and can’t be sure where I got the ones in the photo, but I buy most of my colorful tools at either Sur La Table or Target.
