What is Healthy Eating Anyway?

If you were to ask 10 people what their version of healthy eating was, you’d probably get a bunch of different responses.

To be paleo, vegetarian, vegan or keto, to drink milk or not to; carbs or no carbs. Sugar (we all know that is bad, especially the fake sugars), but what about honey or maple syrup. And so on…

If you are new to healthy eating and from-scratch cooking, I’m sure it is confusing when you read all the different opinions on what is and isn’t healthy. I know I find it confusing at times too.

However, most everyone will agree that cooking from scratch is way better than any pre-made processed food you could purchase from the store.

Why I Started Cooking From Scratch

Since getting married over 10 years ago, I have been researching health and food. I got really sick with mono right after we got married. Even after I got better, I just didn’t have the energy or vibrance I wanted or felt like I should have at 23 years old. That led me down the “researching hole” so to speak.

Even now I love learning about living a healthy lifestyle. I feel so blessed to be able to feed my family with good nourishing food. I know it will provide them the nourishment they need for their growing bodies. My children are learning from a young age what is and isn’t food, real food. This will serve them the rest of their life!

So What Diet is the Best Diet?

Personally, I’ve come to the conclusion that the best diet is the one that makes you feel the best. From my research, I’ve come to believe that the Weston A. Price Nourishing Traditions diet is best for our family.

You can read about that diet more here! It’s great, because it is not a restrictive diet at all. It’s about nourishing your body with good foods, that in turn will crowd out the desire for eating junk foods.

About the Ingredients

You are in the store, there are cheap eggs, 12 for just over $1. Then there are organic eggs for around $4. In some stores there are pastured eggs for $5-8 or more a dozen! How can you justify spending that kind of money on eggs?

It can be hard to justify purchasing the expensive food in the grocery store, especially if you aren’t used to the cost. I know it was hard for me at first. But the more I’ve learned the more I know I’m not wasting my money.

Quality does matter. All eggs are not created equal! Same goes for meat, dairy, grains, veggies, etc.

I’m going to keep this real basic in case you are new to this idea. There is so much out there to learn about food, the farming industry and health, if you really want to investigate. Maybe I’ll even write a more in-depth post on some of these topics one day.

Since the main part of this recipe is eggs, I’ll stick to explaining eggs this time.

About eggs: Buy the pastured eggs if they are available. Not organic, not free range, but pastured! These are the chickens that really are living the good bug eating, dirt scratching, sunbathing life.

Pastured raised eggs are higher in vitamins A, D, E and omega-3s and lower in cholesterols and saturated fat (source). The difference is noticeable to the naked eye too! The yolks of pastured eggs are orange not pale yellow.

In my area, the price for pastured eggs can range from $5-7 a dozen. The best is to find a local farmer that raises pastured eggs and buy directly from the source. Skip the middle man. You and the farmer both benefit from this arrangement the most! Or, if you can, get yourself a flock of lovely chickens. 😉

Ok. Now onto the recipe!

What is a Frittata?

The best way I can described a frittata is like a large omelet that you don’t flip or an egg casserole.

Frittatas contain eggs, cheese, a splash of milk, veggies and sometimes meat.

One of the reasons I love frittatas are they are so easy to make. I love making this for dinner when I don’t have a lot of time to make dinner. I often serve this frittata with fried or roasted potatoes or sweet potatoes and some fermented veggies like pickles or sauerkraut.

  • Ground turkey for ground chicken
  • Fresh spinach for frozen spinach or fresh swiss chard
  • Butter for another animal fat such as lard, bacon fat or tallow

Ingredient List

Ingredients for sausage:

  • 1/2 pound ground turkey
  • 1/2 cup chopped onion
  • 1/8 teaspoon: marjoram, pepper, oregano, nutmeg
  • 1/4 teaspoon: dried basil, thyme, sage
  • 2 crushed garlic cloves
  • 1/2 teaspoon sea salt
  • 2 tablespoons butter

Ingredients for frittata:

  • 8 eggs
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of milk
  • 8 oz fresh baby spinach
  • Salt and Pepper

How to Make this Easy Turkey Sausage and Spinach Frittata Recipe

Make the Sausage:

Tip: I usually make a whole pound of ground turkey sausage and save half the cooked sausage to use later.

Preheat oven for 350 degrees.

Melt butter in cast iron skillet. Sauté onions in butter for a few minutes then add ground turkey.

While turkey is cooking, mix in all herbs and seasoning (marjoram, pepper, oregano, nutmeg, dried basil, thyme, sage, garlic cloves and salt).

Cook turkey sausage until no longer pink.

Make the Frittata:

Tip: If you cooked a whole pound of turkey, take out half and save in the fridge or freezer for later use.

Add fresh baby spinach to the skillet with the turkey. Place a lid on the skillet and let the spinach wilt for a few minutes, stirring occasionally.

In a separate bowl, mix eggs and milk and a pinch of salt and fresh cracked pepper. Once the spinach is just wilted, add the egg mixture right on top of the turkey and spinach. Then evenly sprinkle the cheese on top.

Use a fork to slightly mix the eggs with the spinach and turkey. Don’t mix too much, just enough to let the eggs settle to the bottom of the pan.

Let the frittata cook for 2 minutes on medium low heat. Then transfer to the preheated oven for 10-12 minutes.

Tip: Don’t over cook. Remember the frittata will continue to cook even after you remove them from the oven. Overcooked eggs can be rubbery.

Instructions

  1. Preheat oven to 350 degrees.
