WAFFLES:

  • 2 cups of all-purpose flour sifted
  • 2 ½ teaspoons of baking powder
  • ¼ teaspoon of salt
  • 3 eggs
  • 3 Tablespoons of sugar
  • 2 cups of milk
  • 5 Tablespoons of melted butter
  • 1 teaspoon of vanilla
  • 1 cup of semi-sweet chocolate chips

FOR SERVING (all optional):

  • Chocolate syrup
  • Chopped fresh fruit powdered sugar
  • Whipped cream

Instructions

PREHEAT:

  • Preheat your waffle maker as per the manufacturer’s instructions.

MAKE WAFFLE BATTER:

  • Place the flour, baking powder, and salt in a bowl and mix until combined.

  • In a stand mixer with a whisk attachment, whisk the sugar and the egg yolks until combined.

  • Add the milk, butter, and vanilla until thoroughly blended.

  • Mix the flour mixture with the egg yolk mixture until thoroughly combined.

  • Transfer the mixture to a large bowl.

  • Clean the stand mixer bowl so you can use it for the egg whites.

  • Add egg whites to the now clean bowl and beat on high speed until stiff peaks form. This will take approximately 1-2 minutes.

  • Fold the egg whites into the batter.

  • Fold in the chocolate chips. Be careful not to overmix.

COOK WAFFLES:

  • Once you are ready, add non-stick spray to both sides of your waffle maker.

  • Add 1 cup of the batter to the waffle maker.

  • Close your waffle maker and cook the waffles per the manufacturer’s instructions. Usually, this will take 2 – 3 minutes per waffle.

  • Repeat with the remaining batter.

  • Serve immediately and garnish with chocolate syrup, fruit, powdered sugar, or whipped cream, all optional.
