Brownies are a staple among the American baked goods, and a recipe that has emerged as a fan favorite is the Chick-fil-A chocolate brownie.

Virtually every bakery and fast food joint across the United States has its own riff on the classic dessert, but Chick-fil-A takes extra care to balance the fudgy goodness with just enough cakiness to offset the density found in many brownie recipes.

Chick-fil-A sells their brownies individually wrapped from their menu, but luckily they are easily replicated with a simple list of ingredients and minimal kitchen equipment.

There are two camps of brownie enthusiasts: dense and fudgy or cakey and moist.

While one isn’t better than the other, Chick-fil-A has combined these styles to make the ultimate brownie.

While many brownie recipes don’t use a rising agent, this recipe uses the tiniest amount of baking powder to give it a subtle lift without sacrificing density.

It’s also important not to overmix, as incorporating as little air as possible into the brownie batter is the goal.

As soon as all of the flour is incorporated into the wet ingredients, stop mixing.

A sprinkling of chocolate chunks goes over the batter right before baking, adding an extra chocolatey hit and a wonderful contrast to the moist interior.

The result is a perfectly textured brownie that can be enjoyed on its own, with a hot cup of coffee, or as a sweet finale to a steak dinner.

Ingredients:

  • 1 cup unsalted butter, melted
  • 4 large eggs, room temperature
  • 2 cups granulated sugar
  • 2 tsp vanilla extract
  • ⅔ cup semi-sweet chocolate chips
  • 1 cup all-purpose flour
  • ½ cup Dutch-process cocoa powder
  • ½ tsp baking powder
  • ½ tsp kosher salt
  • ½ cup chocolate chunks

Instructions:

Step 1:

Preheat the oven to 350°F/177°C.

Grease the inside of a 9×13 inch baking dish and press a piece of parchment paper across the midsection of the pan, leaving a few inches of overhang.

The overhang makes removal easier.

Set aside.

Step 2:

In a large mixing bowl, whisk together flour, salt, cocoa, and baking powder until well combined. Set aside.

Step 3:

In a medium-sized saucepan gently melt the butter, taking care not to burn.

As soon as the butter is melted, remove it from the heat and add the chocolate chips.

Using a wooden spoon or spatula, stir the chocolate chips into the butter until they have completely melted and a smooth, hom*ogeneous mixture has formed.

Optionally, make the chocolate mixture in the microwave.

Simply combine butter and chocolate chips in a microwave-safe bowl and microwave on high, stirring every 30 seconds until smooth.

Once you have a smooth chocolate and butter mixture, add in the granulated sugar.

Stir continuously until all of the sugar has dissolved.

Stir in the vanilla extract.

Add in one egg at a time, making sure that each egg is completely incorporated before adding in the next.

Step 4:

Add the dry ingredient mixture into the chocolate batter.

Using a spatula or wooden spoon, fold the ingredients together until just mixed.

The batter will be extremely thick. Resist the urge to add water.

Do not overmix, as overmixing will encourage gluten formation which we do not want.

Step 5:

Pour batter into the prepared baking sheet and spread evenly.

Gently sprinkle chocolate chunks over the top of the batter, taking care to distribute them as uniformly as possible to ensure a consistent bake.

Step 6:

Bake for approximately 30 minutes.

Depending on the heat of your oven, the bake time may vary.

At the 28-minute mark, insert a toothpick to check doneness.

If the toothpick comes out mostly dry with moist specks clinging to it, it’s done.

If it comes out wet, place it back into the oven and test with a toothpick every two minutes until done.

Place finished brownies on a wire rack and allow them to cool completely before cutting into them.

Step 7:

Once completely cooled, use the parchment overhang to lift the brownies out of the pan.

If they’re sticking to the edges, gently go around the perimeter with a butter knife to loosen.

Slice and enjoy!

Ingredients substitutions

While the ingredient list for brownies is pretty straightforward, there are a few items you can replace without compromising on texture or flavor.

1. Baking Soda

The rising agent in this recipe is baking powder, but it is intentionally minimal and only serves to give the brownies a slightly cakey feel.

If you don’t have baking powder on hand you can easily use baking soda in its place, but you would have to use natural cocoa powder in place of Dutch-processed cocoa powder (Dutch-process does not interact with baking soda).

While baking powder and baking soda are not interchangeable, the standard rule of thumb is to use three times as much baking powder as baking soda.

Since this recipe calls for ½ tsp of baking powder, you would use 1/16 tsp of baking soda as a substitution. Or, if you like a denser brownie, feel free to omit both.

2. Natural Cocoa Powder

There are two main camps when it comes to cocoa powder: Dutch processed and natural.

This recipe calls for Dutch-processed cocoa, which has been alkalized, making it non-acidic or “neutral.”

This makes for a more mellow, “earthy” flavor.

On the other hand, natural cocoa is acidic and has a more intense flavor; it’s also more universally available.

While they have different flavor profiles they are easy to swap out for one another.

Keep in mind that natural cocoa is typically used in conjunction with baking soda, so if you swap baking powder for baking soda, using natural cocoa is recommended.

3. Whole Wheat Flour

Incorporating more whole grains into our diets is something we should all be doing, and sneaking them into baked goods in the form of hearty grain flour is a great strategy.

For this recipe, whole wheat flour is an excellent swap for all-purpose flour and will add a warm nuttiness without compromising too much on texture and flavor.

If you’re reheating the brownies as single squares, spread the desired amount on a baking sheet and heat for 4-6 minutes until warmed through.

If you’re reheating an entire slab of brownies, follow the steps above but leave in the oven for 15-20 minutes or until warmed through.

Alternatively, you can store them on a plate covered tightly with cling wrap or foil.

Store in the freezer

Brownies freeze well for up to 1 month.

Place uncovered on a tray and let them sit in the freezer for 3-4 hours until completely frozen.

Once frozen through, cover tightly with plastic wrap or place in a freezer bag, eliminating as much air as possible.

To thaw brownies, leave them on the counter overnight and eat immediately.
