If you like chocolate and almonds, boy do I have a must try recipe for you today! This almond and dark chocolate cookie recipe is must make if you love dark chocolate, almonds and chocolate cookies!

These cookies don’t just have almonds in them, they also have Jif’s new No-Stir Almond Butter in them as well. Trust me when I say these are all kinds of incredible. Jif recently asked me to try their new No-Stir Nut Butter which come in both Almond and Cashew flavors. I used the Cashew Butter to make an amazing Cashew Butter Butterscotch Banana Bread and I am so pleased with how these cookies turned out using the Almond Butter. Truth be told peanuts have always been my least favorite nut, so I am love mixing it up and baking with cashew and almond butters.

For this recipe I started with one of our all time favorite chocolate cookie recipes that I have been making for probably 15 years, my Chocolate Peanut Butter Cup Cookies. I think it’s my husband’s all time favorite cookie recipe and I think the almond version manages to top it. I swapped out the peanut butter for Jif Almond Butter, and replaced the chocolate chips and pb cups with almonds and chocolate chunks. It’s sort of like the grown up version of the cookie.

I have always loved the combo of dark chocolate and almonds, and this chocolate cookie recipes really brings out the best of those flavors.

Because a certain baking blogger somehow ran out of chocolate chips (seriously, how is that even possible, I should fire myself from this gig, run out of chocolate chips???), I decided to go with chocolate chunks in these cookies and cut up a dark chocolate bar. Chopping up chocolate gives you nice big chunks but also all those little shavings really work their way through your cookie, filing it with delicious, decadent chocolate.

Don’t you just want to grab a spoon and dig in? Like most people I’m a big cookie dough lover, but these cookies are one of the cookies that I think are as good if not better once baked.

I made mine fairly large. I used my “big” cookie scoop, which is slightly smaller than a standard ice cream scoop.

Find yourself some Jif Almond Butter and make these cookies. You will not regret it. I will definitely be putting these into my Christmas cookie collection this year. They are just as easy to make as your basic chocolate chip cookie, but the taste is really something special.

Almond And Dark Chocolate Cookie Recipe

Ingredients

  • 1 cup butter softened
  • 3/4 cup white sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup Jif Almond Butter
  • 2 eggs
  • 2 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/3 cup dark cocoa powder regular is fine as well
  • 1 cup almonds
  • 1 cup chocolate chunks or chocolate chips

Instructions

  • Preheat oven to 350*F

  • In medium bowl combine flour, cocoa and baking soda; set aside.

  • In a large bowl, cream butter and sugars together with an electric mixer until fluffy. Add vanilla, almond butter and eggs; mixing well. Stir in flour mixture until just mixed. Fold in chocolate chunks or chips and almonds. Scoop onto ungreased baking sheets. Bake for 8 to 10 minutes. Let cool for 5 minutes on baking sheet before transferring to wire rack to cool completely.

  • Makes approximately 24 cookies, 2-3" in diameter.
